Ummm, If she doesnt mind playing thinking, story games, i suggest you get the Moneky Island series...1-3 (i havent played four) On 1 and 2 the graphics are old....frankly cause the game is old but the gameplay is too great to pass up.

Also, Zork Nemesis and Zork Grand Inquisitor.  Thinking games again like monkey island, but look a bit better.

The above games are favourites of myself and my mother so i reckon there safe for gamers and non gamers alike.

Maybe SSX3. It's fairly open-ended for a snowboarding game - you can just board down the entire mountain without racing if you feel like it - and it's non-violent, looks pretty and is lots of fun to play.

You could maybe try Ape Escape, too. It's not too hard and pretty cute.

Damn. I haven't played any of those in, what, 5 years? Dammit, SSX tricky was awesome.

If you were getting harvest moon, I'd say neither PS2 or GC, but get the 64 version.
But either way, you didn't mention 64 in your list, so I'll just say that the PS2 version is definitely my favorite of the two.
Katamari Damacy is a yes.
Does she like to sing?
If so, Try Karaoke revolution :)
3 is my favorite so far, because you can play duets... It's fantastic when a large chunk of your friends are tone deaf.

Amplitude/frequency are great games, (I think you said she likes DDR?) they're pretty similar, except not... and much less exhausting.

Is she dead-set against violence, or is it just for major violence? because she should give Zelda: windwaker a try.

Trying to think of more videogames that are non-violent but still good.
Jak and Daxter: the precurser legacy is fun, if slightly violent.
