Catfish_Man:
Lufia 2 for the SNES (and Zelda:LttP of course)

guywithoutsocks:
Ooo, good choices.  Lufia 2 had some weak graphics by 16-bit standards, but the puzzles were really great.  Plus, I don't know how many hours of my life I wasted in that bonus dungeon.

Also for SNES:
Gargoyle's Quest
Mega Man X series (if you're into them)
Battletoads (if you need thumb blisters)
Gradius III

Narr:
I am not going to suggest all the stuff you already know you love.

I am going to suggest what the real beauty of emulation is: Fan translated ROMs of games that were never released in the United States.

Seiken Densetsu 3 should be at the top of your list.  It is one of the best games I have ever played.  It's technically Secret of Mana 2 with a much more fun battle system.  There's 6 characters to pick from (you use 3, just like other SoM games), each has two class changes so you get to customize them a little bit that way.  The translation is also really good.  tomato-san, the guy who did it, is one of the moderators (or used to be, it's been a supremely long time) at ZSNES and is a good fellow.  Last I heard, he's working for Funimation.

Terranigma is another Square title that never made it State-side that is pretty good.  Tales of Phantasia, while it HAS been released for the GBA now, is another must-play, as is Rockman & Forte (released for the GBA as Megaman and Bass).

Terranigma was actually Enix, before the merger.  Part of the Soul Blazer trilogy (which didn't really have much to do with each other) which I mentioned above.

Alright, I'm gonna start a list. It's gonna be stupidly long. Enjoy.

SNES

Gradius III
Final Fight 1-3
Final Fantasy IV & VI (VI is easily the best FF made, and one of the best RPGs ever made in my opinion. IV is quite high up there as well.)
Lufia 2 (one of the best RPGs ever made, with easily the most heart wrenching ending ever made.)
7th Saga
Battletoads (just be prepared to use cheats to skip level 3.)
Super C
Secret of Mana
Secret of Evermore (everyone seemed to hate this game except me and 2 other individuals I've ever met. I loved the shit out of it. Toaster Dog of Doom FTW.)
Illusion of Gaia
Shadowrun
Soul Blazer
Legend of Zelda: A Link to the Past
Super Metroid
Super Mario World
Megaman X 1-3
Breath of Fire
Breath of Fire 2
Actraiser
Actraiser 2
Earthbound
Super Punch Out!
Chrono Trigger (This is very close to being my favorite RPG of all time. Hated the shit out of the sequel)
The Lost Vikings
Uncharted Waters
Zombies Ate my Neighbors!
Demon's Crest (Firebrand is the coolest "hero" ever.)
Donkey Kong Country
Bahamut Lagoon
Contra III
F-Zero
Legend of the Mystical Ninja
Super Mario RPG: Legend of the Seven Stars
Ninja Gaiden Trilogy
Seiken Densetsu 3 (aka Secret of Mana sequel but better in every possible spect)
Maximum Carnage
