NES

Double Dragon 1 & 2
River City Ransom
Mighty Final Fight
Bionic Commando
Blaster Master
Wizards & Warriors (The first one was the only one worth playing)
Deja Vu
Ghostbusters (This is a love/hate relationship if i ever saw one)
Goonies
The Adventures of Lolo
Bomberman
Bayou Billy (Only if you like ball bustingly hard games)
Milon's Secret Castle
Who Framed Roger Rabbit?
Startropics 1 & 2
Little Nemo: The Dream Master
Lemmings
Bubble Bobble
Spy Hunter
Excite Bike
Hogan's Alley
Joust
Balloon Fighter
Iron Tank
Commando
Uncharted Waters
Y's
Final Fantasy 1
Dragon Warrior I - IV (just keep in mind that Dragon Warrior 1 is the epitomy of "Ye Olde School" with no pretty ribbons attached. It was one of the first after all. I also consider IV to be one of the best RPG's ever made.)
Battle Toads
Castlevania 1, 2 & 3 (3 is one of my personal favorite games ever.)
Legend of Zelda 1 & 2
Super Mario Bros. 1, 2 & 3
Punch Out!
Contra
Metroid
Teenage Mutant Ninja Turtles 2
Mega Man 1 - 6
Ninja Gaiden 1 - 3
A Boy and his Blob
Kid Icarus
Crystalis
Gradius
Maniac Mansion

Probably several I missed in both lists.. but enjoy!

Also for SNES:
Gargoyle's Quest
Mega Man X series (if you're into them)
Battletoads (if you need thumb blisters)
Gradius III

--- End quote ---

When you say Gargoyle's Quest, i think you mean Demon's Crest, or am I forgetting a game?

SNES

Gradius III
Final Fight 1-3
Final Fantasy IV & VI (VI is easily the best FF made, and one of the best RPGs ever made in my opinion. IV is quite high up there as well.)
Lufia 2 (one of the best RPGs ever made, with easily the most heart wrenching ending ever made.)
7th Saga
Battletoads (just be prepared to use cheats to skip level 3.)
Super C
Secret of Mana
Secret of Evermore (everyone seemed to hate this game except me and 2 other individuals I've ever met. I loved the shit out of it. Toaster Dog of Doom FTW.)
Illusion of Gaia
Shadowrun
Soul Blazer
Legend of Zelda: A Link to the Past
Super Metroid
Super Mario World
Megaman X 1-3
Breath of Fire
Breath of Fire 2
Actraiser
Actraiser 2
Earthbound
Super Punch Out!
Chrono Trigger (This is very close to being my favorite RPG of all time. Hated the shit out of the sequel)
The Lost Vikings
Uncharted Waters
Zombies Ate my Neighbors!
Demon's Crest (Firebrand is the coolest "hero" ever.)
Donkey Kong Country
Bahamut Lagoon
Contra III
F-Zero
Legend of the Mystical Ninja
Super Mario RPG: Legend of the Seven Stars
Ninja Gaiden Trilogy
Secret of Mana 2 (The actual name of it isn't crossing my mind ritght now, but it's amazing)
Maximum Carnage
Super Mario All Stars
Terranigma

--- End quote ---

I think you got the most of them there actually... if not all =P
Seiken Densetsu 3 is also a wonderful game and a must play! ... but wait. That's probably what you meant with Secret of Mana 2, sorry, my bad.
And if you like Lufia 2 and want a real challenge play Lufia 1 (I never completed it but I have a friend who did)

Good catch - Demon's Crest it is.  My mistake.

Also, were Seiken Densetsu 3 and/or Terranigma ever released in the U.S. in any shape or form?  It seems like a real tragedy if they weren't.

The only way to play.
